So, my idea is to blog about how to use leftovers..... Make something awesome out of something that you may throw in the trash after 5 days............
After I made this dish, I thought a great idea would be to show a pic of the leftovers, and then a pic of the new dish........ made with the leftovers.......... and a little story of how it came to be.
Well for this first one, I didn't know to take the before pic, since I thought of it after I made these awesome Potato Chicken Tacos!!
I had some braised chicken thighs and potatoes leftover.
On my counter, I had some tomatoes, an avocado, and some some home grown cucumbers.
In my fridge, I had some salsa my husband made, and some sour cream., along with shredded cheese and flour tortillas.
So, I chopped up the leftover potatoes real fine and started to fry them in a nonstick skillet. While I did that, I deboned the chicken pieces and chopped them too.
Once the potatoes started to brown, I added some taco seasoning I had on hand and a little water.
Then, I added the chopped chicken and let it cook for a while.
I eventually added more water and some homemade salsa from the fridge. I added water a couple times and let it cook down......
So, my final dish will be to heat up this wonderful Chicken Taco mixture and serve with the usual...... Hard Taco Shells, Flour Tortillas, and Shredded Cheese with the usual accompaniments of chopped tomato, onion, and sour cream.
The potatoes really tasted good in the dish, which shows how you can stretch a protein with potatoes and save a little cash!
